Straight-pressed whole bunch Cabernet Sauvignon from the beautiful Sutherland Estate in Dixon’s Creek, Victoria.

Fruit came in looking delicious. Lightly pressed for about 60% extraction. Straight to oak barrels for six months of rest and play. A little bit of texture and colour was added before bottling by adding 2% of our whole bunch with 2 weeks of carbonic maceration.

 
Drink with Mussels or a Portuguese Fish Stew for G O O D times.

+Contains only minimal sulphur and is wild fermented without any other additions.
